Sugar-free Buckeyes

Over Christmas I made Buckeyes for my coworkers. They were yummy but full of sugar. This weekend I combined a couple recipes I found online and made a sugar-free version. They are good but I want to keep working on the recipe. I think I'd prefer one without cream cheese since they have to be refrigerated.



Buckeyes
from The Rogue Cookie

4 oz softened cream cheese
1 cup creamy peanut butter
1/2 cup sweetener equivalent to sugar (I used Stevia in the Raw)

Mix all ingredients together till combined. Form into 1" balls and place on cookie sheet lined with wax paper. Refrigerate at least an hour.

Chocolate coating:
from Maria's Thin Mint Cookies

1 oz unsweetened baking chocolate
2 Tbs butter or coconut oil
10 Tbs heavy cream
1/4 cup Stevia in the Raw or Truvia

Microwave chopped chocolate and butter or oil together at 30 second intervals till melted. Whisk together with a fork till smooth. Add sweetener and mix till smooth. Warm cream to room temperature and add to chocolate mixture. Continue whisking till totally smooth. Dip cold peanut butter balls in warm chocolate to coat and place on wax paper. Makes approximately 24.
